![]() ![]() The company would quickly jump on the vacant space, moving into the old Randall’s in 1996. In 1995, Randall’s would decide to call it quits in this portion of Alief, and Viet Hoa would seize the opportunity. However, Viet Hoa’s location and timing were impeccable, quickly becoming the go-to Vietnamese Grocery store in an increasingly Asian area. When Viet Hoa opened in Wilcrest Plaza, they were the only Asian tenant, with other spaces being leased to a pet store, a country buffet, and an office supply store, with the major grocery sales of the area being handled by the Randall’s across Wilcrest. This was, of course, at a time when the prominent Asian presence was in Eado, which was known at the time as Chinatown. In 2003, Viet Hoa would relocate here from their existing store at 10828 Beechnut St, Houston, TX 77072, to the vacant space. Kmart would reopen this location as a Big Kmart in 1997, lasting out until 2002, when Kmart would exit Houston in a similar two-stage process. While Kmart would soon suffer a similar fate in the Houston area, they were unarguably the better option in terms of reach and customer base. This location, along with nine other stores, would be purchased by Kmart. ![]() Venture would exit Texas in two stages, with the final stores closing in 1998. The repositioning was meant to help the company restructure itself, but it was too little, too late. However, when Venture had expanded into states like Texas, they began taking on more competition, specifically from Wal-Mart and Kmart, which was more price motivated. This concept worked well enough when the chain was merely a regional competitor against Target. Early on, the allure of the stores was their high-quality merchandise, which was only marginally more expensive than Target. A description that the company grew to resent but was quite apt as much of the core staff had been poached from Target, including co-founder John Geisse. For those who don’t remember Venture, they are best described as a slightly nicer version of Target. Just days prior to the grand opening, Venture had announced a repositioning of the company to be more value-oriented and drop their higher-end merchandise. ![]() Although Sugar Land would open a few months later, plans for that store came first. Making it one of the last Texas locations and the final planned Houston area store. In July 1995, the building at 8300 W Sam Houston Pkwy S, Houston, TX 77072 would open as Venture Store #141. ![]() ![]() Wrap your dough and place it in the freezer to chill for 15 minutes. Then, fold one side towards the center (like a brochure) and then fold the other side over the center. Use a rolling pin to flatten the dough into a rectangular shape with about 1/2 inch thickness. Transfer the shaggy dough onto a clean surface and use your hands to form it into a ball of dough and knead the dough twice to make sure it keeps its shape. Then in a large bowl, stir in the sour cream until it becomes a shaggy dough. In a food processor, add the flour, powdered sugar, salt, and cubed butter and pulse until the butter pieces are slightly smaller than the size of dimes. Instead of waiting hours for dough to chill and laminate properly, you can have a pastry dough ready to bake in under 1 hour. What’s great is that you can easily make it into a crust or a pastry like apple turnovers. This rough puff pastry is super simple to do and makes a flaky and multi-layered crust (like in guava and cheese puff pastries). This helped to shorten the time it took to make the tarts, and most importantly, it shortened the amount of headaches I got. After years of tasting different egg tarts (both Honk Kong and Portuguese versions), and also trying to bake different variations, I wanted to move away from traditional recipes to simplify the crust and adjust the custard filling. While both egg tarts are delicious on their own, I’ve realized that I wanted to make a different and simplified version based on my preferences. The Portuguese pastry shell has a simpler “ruff pastry puff” process that I could start from–it also took less time. There are also long amounts of chill time in between each fold and lamination. They both have a generalized base of a pastry shell recipe, but the Hong Kong egg tart has a shell that requires laminating two different doughs together: a water dough and an oil dough. The center is also less sweet than the Portuguese egg tarts because they use less sugar and are slightly paler in color due to using the whole egg.Įach of these egg tarts require different techniques in baking. They have a crust that is a mix of pastry puff and shortbread and therefore has a sturdier shell. Hong Kong egg tarts: these are typically found at dim sum restaurants. They are also baked until the centers darken, giving them their signature blackened look. Many recipes also call for cinnamon in the custard center and sprinkled on top. The centers are much more sweet and have a traditional custard base by using only egg yolks. Portuguese egg tarts: Also known as “pastel de nata,” this type of egg tart has a more flaky and pastry puff shell. ![]() It’s also worth mentioning that egg tarts vary and the two most prominent types are: Or maybe, you’ve stood in line at the ever popular 85° Bakery where you can make towers of bread and pastries on your tray and hoard vast amounts of silky custard Portuguese egg tarts for the week.Īgain, this recipe is a hybrid of both of these styles.
